BEHIND THE PRODUCT: The name "Chateaubriand" originates from France and traditionally refers to a 'thick tenderloin of beef.' It is believed to be named after the 19th-century Romance Writer, François-René de Chateaubriand, who was famously passionate about this cut of beef. Our Chateaubriand Dinner for 4 brings this luxurious dining experience to your home, featuring 2 lbs of premium, tender Chateaubriand alongside your choice of 4 pieces of Duck Leg Confit or 4 Escargot served in Garlic Butter. SERVING SUGGESTIONS: For the perfect Chateaubriand, trim and cut the beef tenderloin steak (350-500g) to retain only the center cut. At room temperature, season with salt, pepper, and olive oil. Sear on a hot pan for 5-10 seconds on each side, then reduce the heat and cook for an additional 4-5 minutes. Serve with either a classic bearnaise sauce or with roasted potatoes for a delightful meal.

OUR BEARNAISE SAUCE RECIPE: To prepare a delicious bearnaise sauce, combine 28g of shallots, 55g of tarragon, 85g of chervil, salt, pepper, and 4 tablespoons of vinegar in a pan. Reduce the vinegar by two-thirds. Remove from heat, add 5 egg yolks, and on low heat, gradually whisk in 170g of butter until the sauce is smooth and creamy.

This Chateaubriand is Kolikof's version of one of my favorite dishes in Las Vegas. Traditional Chateaubriand is an extremely moist tenderloin roast consisting of Filet Mignon and the larger tenderloin sub-primal. This tender roast is perfect for any special occasion or dinner party.

The word Chateaubriand originates from France and roughly refers to a ‘thick tenderloin of beef’. Legend has it that Chateaubriand was named after famous 19th Century Romance Writer, Francois-René de Chateaubriand, who was an avid lover of the cut of beef.

Our Chateaubriand Recipe:

Trim and cut beef tenderloin steak (350-500g) so only the center remains.

At room temperature, season with salt, pepper and olive oil.

Place on pan for 5-10 seconds on each side, then reduce the heat for another 4-5 minutes.

Serve with either bearnaise sauce or potatoes.

Our Bearnaise Sauce Recipe:

Place 28g of shallots, 55g tarragon, 85g chervil, pepper, salt and 4 tbsp of vinegar into a pan and reduce the vinegar by 2/3.

On a low heat gradually combine with 170g of butter.
